Before you push open the unmarked dark door tucked inside a residential lane off Zhenning Road, there is no brass plaque announcing that you have arrived at Shanghai’s only three-Michelin-star restaurant. Inside, Stefan Stiller has arranged twenty-odd counter seats around a glowing open kitchen. The chefs plate with tweezers an arm’s length away, yet the room feels closer to a cultivated dinner party than a hushed temple.

The menu rotates every six to eight weeks, anchored in classical European technique and inflected with East Asian seafood and Yunnan fungi. If you have one splurge evening in Shanghai, spend it at this counter.
